This cake is moist and delicious - perfect as a decadent birthday

treat.


Ingredients:

350 g (2 ½ cups) flour

50 g (½ cup) cocoa powder

2 ½ teaspoons baking powder

1 ½ teaspoons bicarbonate of soda

180 ml (¾ cup) vegetable oil

425 g (2 cups) sugar

3 eggs

2 teaspoons vanilla

125 ml (½ cup) Baltic Night

300 g (2 cups) grated courgette


Combine flour, cocoa powder, baking powder and bicarbonate of soda and set aside. Beat together oil and sugar. Add eggs. Stir in vanilla. Stir in flour mixture and Baltic Night; add grated courgette.


Pour into a well-greased and floured pan; bake 1 hour at 350 F / 180 C (160 C for fan assisted ovens).


We recommend layering the cake with raspberry jam in the middle.


Smother with chocolate icing and serve with a chilled glass of Baltic Night!
